
While I love all the recipes I share with you, Sweet Potato Brownies would have to be the favourite of all my sweet treats.
Sweet Potato Brownies are my gift to you as recipe 4 of the Summer Recipe Series: Self-loving treats for a sweet-tooth.
Never really fond of brownies, this recipe has changed that for me.
It’s Vegan, it has a vegetable in it (and I love to sneak veggies into sweets when I can, for that extra hit of earthy nutrition), and it’s totally, the most delicious dessert.
Especially when served with a large spoonful of Greek Yoghurt on the side.
Make this for yourself, share it with your guests and relish in the ‘Oohhhhsss and ahhhhhhhsss!’ as it’s devoured.
INGREDIENTS
- 1 large Sweet Potato
- 1/2 cup Almond Flour
- 1/2 cup Raw Cacao
- 1/4 cup Maple Syrup
- 1 tsp Vanilla Extract
- 1 tsp Baking Powder
- 1/4 tsp Celtic Sea Salt
- 1/4 cup Coconut Oil
For an extra special treat, add in some Walnuts or Hazelnuts.
METHOD
- Preheat oven to 180 degrees celsius.
- Chop the sweet potato into small pieces and steam them until soft.
- Once soft, place the sweet potato into a mixing bowl and mash until smooth.
- Melt the coconut oil in a small saucepan on the stove.
- Add in the maple syrup, melted coconut oil and vanilla to the sweet potato and mix well.
- Add in the almond flour, raw cacao, baking powder and Celtic sea salt, and again mix well until smooth.
- (If using additional nuts, fold them in now.)
- If not, pour the mixture into a baking dish lined with baking paper, and smooth out the top with a spatula.
- Bake for 30-minutes, or until a knife inserted into the centre comes out clean.
- Leave the brownies to cool in the dish for at least 10-minutes, before cutting and serving.
- The brownies taste delicious still warm, served with Greek Yoghurt. Or if there happen to be any left over brownies, place them in the fridge where they will keep for up to a week.

Almond Flour
I’ll be honest, I don’t use this flour often, because of the nut-free policies at my son’s school. But when I’m not cooking for my son’s lunches, I love to use Almond Flour (or Almond Meal, as it’s also known). Gluten-free and wonderful to use in pie and tart cases, this flour alternative adds a sweet nuttiness to everything.
Almonds contain a high amount of good fat and, according to Traditional Chinese Medicine are brilliant for strengthening our Lung Qi and helping with the transformation of phlegm. They also lubricate the Intestines. You can make Almond Flour yourself by grinding raw almonds into a fine powdered flour, or buy it ready-made.
Raw Cacao
This is a high quality superfood, rich in magnesium, calcium, iron, zinc, potassium and antioxidants has a rich, intense flavour, making it perfect for gourmet and health-conscious recipes. People often use cocoa to add the chocolate flavour to their foods – which also comes from the cacao bean – but due to the way cocoa is processed (with heat), makes it less nutritional. So where possible choose Raw Cacao over cocoa, so you can enjoy the cacao in its most pure form.
From a mental health perspective, we love Raw Cacao as it boosts serotonin and endorphins – known as the ‘bliss chemicals’ – so we feel less stressed and more at ease. It contains theobromine, a mild stimulant similar to caffeine, but Raw Cacao has a higher concentration, thus providing us with a gentle energy boost and improvement to our mental clarity, without the jittery side-effects of caffeine. Not only that, the flavonoids in Raw Cacao improve blood flow to the brain, helping our brain function better while protecting against neurodegenerative diseases.
Maple Syrup
Maple Syrup is a good refined-sugar alternative as it’s minimally processed, contains fewer harmful compounds (like fructose), and is more nutrient-rich. It contains essential minerals like manganese, zinc, calcium, potassium and iron, plus over 24 different antioxidants. Offering a richer, earthy, caramel-like flavour and a more balanced effect on blood sugar levels, Maple Syrup is eco-friendly as its harvested from trees in a sustainable way, that doesn’t harm the tree itself.
Celtic Sea Salt
Celtic Sea Salt is a more natural, less processed alternative to refined table salt, offering a broader range of trace minerals. Yes, it contains over 80 essential minerals, including magnesium, potassium, calcium, iron and zinc. Because of its mineral profile, Celtic Sea Salt supports electrolyte balance and hydration, helping the body absorb and retain water more efficiently, and supports the adrenal glands, which are responsible for managing the body’s stress response and regulating hormones. It can also help with the absorption of nutrients.
Celtic Sea Salt is harvested through natural evaporation of seawater and is often hand-raked, with no additives or bleaching agents, hence its greyish colour. This is in contrast with refined table salt which undergoes heavy processing, including bleaching and the addition of anti-caking agents like calcium silicate and sodium ferrocyanide. What about taste? I love it! It has a more complex, nuanced flavour, with a subtler, richer saltiness; hence why it makes food taste so delicious! This is your more wholesome and eco-friendly salt option.
Coconut Oil
Coconut Oil stands out from other oils due to its rich MCT (Medium-Chain Triglycerides) content, which supports energy production, weight management and brain function. It’s a stable oil for high-heat cooking, has natural antimicrobial and anti-inflammatory properties, and benefits our skin, hair and overall health. Coconut Oil is a very versatile oil and a valuable addition to both dietary and personal care routines.
