Cucumber Bites: Summer Recipe Series

Cucumber Bites are delicious, easy to prepare, and especially great for summer events and picnics.

And this recipe is the first of 6, that will make up the Summer Recipe Series: Self-loving treats for a sweet tooth.

I came up with the Cucumber Bites recipe after being asked last minute, while on holidays (without all my special cooking equipment and ingredients), to bring along something to snack on at a Christmas gathering.

This starter dish or snack plate is beautifully cooling and hydrating on those hot summer days.

Cucumber Bites are Christmas coloured – so perfect for the Australian summer Christmas – and all the ingredients can be easily sourced at the supermarket, and don’t require any cooking or special equipment.

Simply whip them up just before they need to be served, and they’ll be delish! 

Depending on how many people you’re serving will depend on your quantities, but have a play with these ingredients, and you’ll soon see how easy it is.

INGREDIENTS

  • 1-2 bite size thickness Cucumbers
  • 1 Avocado
  • Greek Yoghurt
  • Raw Salmon (optional)
  • Refined sugar-free Jam*
  • Herb of your choice. Dill or Coriander work nicely.

*I love to use St. Dalfour Jam as it’s refined sugar free, tastes amazing and is French. Oh, and because most supermarkets stock it. It is readily available here in Australia and when I was living in the UK.

METHOD

  • Cut your cucumber into slices about 1/2 cm thick, and place on a serving platter.
  • Mash up the avocado, and mix with the greek yoghurt.
  • Spread little dollops of the avocado/greek yoghurt mix on each piece of cucumber.
  • Cut the salmon into small bite size pieces and place one piece on top of each Cucumber Bite (on top of the avocado/yoghurt mix).
  • Put a much smaller dollop of Jam on top of the salmon.
  • Then add a small piece of the herb you’re using to the top!
  • And there you have a Christmas platter to take to your family gathering!

*If you have Vegetarian company, either leave the salmon off or substitute it for a small piece of cooked Haloumi Cheese. This version is delicious too!

In Traditional Chinese Medicine, their ability to nourish Yin, support the digestive system, and sooth Liver Qi makes them valuable for promoting internal balance, especially for people who experience dryness, Yin deficiency or emotional stress.

Yoghurt

Yoghurt is a powerhouse of probiotics, essential nutrients, and health-promoting compounds that benefit digestion, immune function, and overall health. In Traditional Chinese Medicine, Yoghurt is seen as cooling and moistening, making it useful or clearing heat and moistening dryness. The protein and fat in Yoghurt help support the body’s energy (or Qi) and the production of blood.
